Orecchiette, Mushroom and Lemony Broccoli Rabe


(Note: This recipe serves 2 people. Need to double recipe if using the whole box of pasta.  Also, the only salt in this recipe is in the chicken broth and the cheese, so if you are substituting or omitting either of these, you may need to add some salt at the end prior to eating. Lastly, since I am using cheese, I use a parve chicken soup mix as the broth.)

  1. In a pot of boiling water, add the orecchiette and cook the pasta according to the directions on the package.
  2. While the pasta is cooking, in another pot, boil enough water to cook the rabe. Add the chicken broth. Add the trimmed broccoli rabe and cook until tender. Drain. Set aside broccoli rabe in a separate bowl.
  3. In the empty rabe pot, add a few tablespoons of the oil and the minced garlic. Saute the garlic. Add some lemon zest to the garlic oil mixture. Add the rabe back into the pot.
  4. Slice the mushrooms and add them to the rabe mixture. Saute for a few minutes.
  5. Combine the cooked pasta into the pot with the broccoli rabe mixture. Stir.
  6. Serve with grated pecorino romano cheese.
